          Happy Thanksgiving ladies and gentlemen!

For me this year, we are not entertaining the in-laws. My brother in-law stole my glory, and we get to enjoy some dry *** oven roasted turkey.

However, I am not a man to break tradition, I'm dropping four turkeys in oil this morning. Did one for my ex boss/co-worker now. And have three going for us to share with whoever.

Hope yall have a great day, cause I'm working on it.

          Hell Fab

you should try my salt brine butter injected turkey. takes 1-2 days to prep, but is beyond juicy.

i came up with it some years back by combining 3 different recipes. i also have a similar recipe with cider injections. that one takes a few months to fully prep.

                  i make my own cider.

                  happy gobble gobble day.

That is another traditional but more way to work in flavour, spice and more. The indian cooks do similar things to their Tikki (?) Meat Meals, a chicken Tikki will sit ( air insulated and at heat) in flavouring juice for a week ( source, a closeby indian restaurant cooking it that way).

If its more than 3 months around it stops being cider and is called new vine. 6 months old apple-vine is a regional speciality in Frankfurt, germany.

(I love my apple cidre 2-4 weeks old, young, just before it tips over but nearing the brink).

i make my cider around 22-24% abv. if i made it under 10% it would finish in a few weeks. the yeast i prefer for flavor, is designed to ferment to 14-16%, abv so most of it dies after 18% slowing the final fermentation.
